One-Pan Garlic Butter Steak and Veggies

Ingredients:
  • 2 lbs sirloin steak, trimmed and cut into 2-inch pieces
  • 1 lb asparagus, ends trimmed
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • Optional: 1 tbsp chopped fresh parsley for garnish
Instructions:
  1. Preheat your oven to 425°F (220°C). This high heat will ensure a good sear on the steak while quickly cooking the vegetables.
  2. Prepare the vegetables: Lay the asparagus and bell peppers on a large sheet pan. Drizzle with half the olive oil and season with salt, pepper, and half the garlic. Toss to coat evenly.
  3. Season the steak: In a bowl, toss the steak pieces with the remaining olive oil, garlic, smoked paprika, salt, and pepper.
  4. Combine on the pan: Distribute the seasoned steak pieces evenly among the vegetables on the sheet pan. Dot the steak and vegetables with small bits of butter.
  5. Roast in the oven: Place the pan in the oven and roast for about 12-15 minutes, or until the steak is browned and cooked to your liking and the vegetables are tender and slightly charred.
  6. Serve: Remove from the oven, garnish with fresh parsley if desired, and serve directly from the pan for minimal cleanup.
