Grilled Herb-Marinated Chicken Skewers
Ingredients:
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- Salt and freshly ground black pepper, to taste
Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes prior to grilling)
Instructions:
- Prepare Marinade: In a large bowl, combine the olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, salt, and pepper.
- Marinate Chicken: Add the cubed chicken to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat Grill: Preheat your grill to medium-high heat.
- Assemble Skewers: Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece to ensure even cooking.
- Grill: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and has nice grill marks.
- Serve: Remove from grill and let rest for a few minutes before serving. Serve with a side of grilled vegetables or a fresh salad for a complete meal.
