Grilled Herb-Marinated Chicken Skewers

Ingredients:

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • Salt and freshly ground black pepper, to taste
    Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes prior to grilling)

Instructions:

  1. Prepare Marinade: In a large bowl, combine the olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, salt, and pepper.
  2. Marinate Chicken: Add the cubed chicken to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat Grill: Preheat your grill to medium-high heat.
  4. Assemble Skewers: Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece to ensure even cooking.
  5. Grill: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and has nice grill marks.
  6. Serve: Remove from grill and let rest for a few minutes before serving. Serve with a side of grilled vegetables or a fresh salad for a complete meal.

These skewers are not only high in protein but also feature a blend of herbs that enhance the flavor without adding sugar. Plus, they’re easy to make and involve minimal cleanup, making them perfect for a festive Labor Day BBQ.
